Just wondering if I should go ahead and switch the pots when i put my new pickups in my carvin.

I had a Carvin that I swapped out the pots on and wish I hadn't. Carvin pots are smaller in diameter (at least they were when I had mine) and I had to enlarge the hole in the guitar for the new pots (I'm assuming you don't have a bolt guitar with pickguard). I personally would leave them alone.

Nah, just leave it stock. They're good enough. The only issue might be that the new pickup rings don't line up with the Carvin ones, and you may have to redrill the holes, but just do it so it's all masked by the ring, so you can't see anything abnormal.
