Some newbie questions...
1. On the adjustable coil side of a humbucker, what happens when you screw in the 6 screws? Does it change the tone?
2. What does turning them clockwise/counter-clockwise do?

You should try it and see. That's the best way to know.
Adjusting the pole up or down changes the volume of the individual strings. If one is to loud, like the B string, you might adjust that pole a little further away.
I start by setting my E string polepieces even with the top of the pickup and the middle four in an arch that matches the arch of the fingerboard.
Then I play the guitar and listen if any strings are to loud or to quiet.
Moving a pole closer to the string makes the string brighter and louder.
Experiment.
