How do you enter a 16 digit number without adding extra numbers on the end or
displaying a formula? I have tried all the Format Cells options with no luck.

Excel can cope with 15 digits.
Assuming your 'number' is something like a bank account number and no math
will be done on the number: type an apostrophe before entering the number;
e.g. '1234567887654321

Format your cell as text or put an anpostrophe in front of your
numbers.
i.e
'12345678912345678
