Is it normal for there to be that many wires to be, what looks like, taped together?

That looks normal to me.That wax papery tape stuff looked funny to me too,the first time I open one.I just tend to leave it alone as much as I can and not disturb anything.

The reason I ask is this pickup has always had a his/hum type sound like a single coil and I was wondering if it could be somthing in the way it was wound.

yes that is what the NEWER duncans look like
I am gonna get stones thrown at me for what i am going to say but it seems to me that the duncans of the past were better made?
they used to use black insulation tape for the wires that connect the bobbins and many swear that the older quot;Jquot; series made pups sound best and i agree
these are easy to indentify
they have a rounded edge white label that says the model name
like quot;JBJquot; or quot;DCJquot; or quot;DDJquot;
the newer ones i have tried dont have MJ's initial and do not sound as warm to me?
