What pups would be good in a tele for soul, funk and blues/blues rock?

An Antiquity I flatpole set would work great for those styles. The STL-2 Hot lead and STR-2 Hot rhythm would work well for blues/rock, but may be a little hotter and darker/fatter than you'd want for soul/funk. The JD Tele lead would fall in between the Ant. lead and the STL-2.
If it were me, and my Tele was a traditional 2-pickup model, I would go with an STL-2 (Tapped) in the bridge and an STR-2 for the neck. I would use the Joe Wilson Wiring Scheme. This, from the Duncan website-
This wiring was designed for one of our sales reps in the Southeast, Joe Wilson, who wanted to add some extra versatility to his Tele®, while retaining the stock look. For this scheme, we use our quot;tappedquot; Hot Lead (STL-2T) and a Vintage Rhythm (STR-1) pickups. We used a special 4-pole 5-way switch in place of the standard 3-way switch. In position 1, you'll get a hotter Tele lead sound. Position 2 will give a traditional Tele lead sound. Position 3 gives you both the rhythm and quot;traditionalquot; lead sound in quot;parallelquot; (the typical Tele wiring). Position 4 gives the rhythm and quot;traditionalquot; lead sound in quot;series,quot; a warmer and fuller sound for smooth jazz runs. Position 5 gives you the rhythm pickup by itself. We also put in a push-pull pot on the tone control that reverses the phase of the neck pickup. This gives a nice, chiming, James Burton-esque sound in positions 3 and 4. Make sure that you cut the short bare wire between the cover and the black wire on the rhythm pickup. You must then run an additional wire from the cover to ground, so that the cover still shields the rhythm pickup. The 5-way switch we show here is Yamaha's 4-pole 5-way switch. The value of the push-pull pot should be 250k. Take your time wiring this one, and always take your guitar to your local technician if you are not comfortable wiring your own instrument.

For vintage output, I like the Antiquity 1 Tele set best.
For more output, I like the Tapped Tele Hot bridge pickup which is kind of like having a Broadcaster output bridge and a Hot output Tele pickup all in one pickup.

I sent you a PM. Another very nice pickup is the Jerry Donahue. It's a little hotter than the Antiquity and not quite as hot as the Tele Hot. It's one of my favorites and it has smooth highs that are not overly sharp and a powerful, thick, midrange focused tone that makes taking bluesy solos that push an amp into overdrive with some of the buttery honk of a nice P-90. It's a very cool pickup and I use mine with an Antiquity Surfer Strat neck pickup. Lew

Thanks for the PM. Just a couple of questions:
1. Does the Surfer fit in a tele? (I'm making this guitar so it doesn't technically matter but I just wanted to check in case I want to stick a tele pup in).
2. Which do you think would suit those styles more? I put in blues rock just so that people would know that I wanted a bit of overdrive occasionally rather than a clean blues tone all the time.

I'm a blues rock player myself. If you're building this guitar, a Strat neck pickup will sound better than ANY TELE NECK PICKUP, and the Surfer is one of the very best I've ever used. I'd have that guitar routed so a Strat neck pickup will fit.
The JD works beautifully for me. I had a '51 Tele...a real one. I searched forever trying to find a modern pickup that sounded like the that one and finally found it in the JD.
The story is that Jerry Donahue had Seymour copy the bridge pickup in his '52. Must've been similar to the bridge pickup in my '51.
Those early Fender pickups are mostly along the lines of the alnico 5 Duncan Broadcaster but there are some that are differant and apparantly Jerry and I both had old Teles with a bridge pickup that was stock but differant: hotter, fatter, thicker...not as glassy and or quite as twangy.
I prefer that tone. The Antiquity I also has that tone but it's not quite as hot as the JD.
The Antiquity I, being wound a little less hot than the JD, does have a little more chime and twang.
I have an Antiquity set in one Tele and the Jerry Donahue in another. It's hard to find it all in one pickup so I use both.
There is a pickup though that does have the tone of both: the alnico 2 Tapped Tele Hot from the Duncan Custom Shop. Tapped it has the tone of the Antiquity I and the full output is similar to the Jerry Donahue. I use one in a Strat that's routed to fit a Tele bridge pickup.

This is going to be the first guitar I've built on my own so I don't fancy splashing out for a custom shop model in case it's crap so I'm thinking surfer JD is probably the way to go.

The Antiquity I bridge pickup is still hotter than a vintage Strat bridge pickup so the Antiquity Surfer would sound great with it. I have neck and middle Surfers in my Strat with the Duncan Custom Shop Tapped Tele Hot and they sound killer combined with the Tapped Tele Hot: either tapped (similar to the Antiquity I) or full output (similar to the JD). I've just been listening to the clip of the JD on the SD clips page and I'm really liking the dirty clip. I've never liked the clean clip for the tele pups but that's just personal taste on the type of tune.
