Assuming those are actual humbucker mounting rings. They look like they are.

I bet the feedback on that thing would be outrageous if it did have 'buckers.

Certain aspects look familiar, but I can't quite put my finger on it....

That's what I was thinking... but how would the piezo pickup be affected with the sound holes filled?

Piezo pickups go off of string vibration, not necessarily anything to do with the soundhole. There are solid body electric guitars that have piezo bridge systems.
