Unless I'm mistaken I think there has been a lot of talk on this board about these excellent quality cables, and how they supposedly beat the pants off of Planet Waves or other high-end, expensive cables. Any opinions?

I think they're amazing. I have two cables myself, from my guitar to my pedalboard and from my pedalboard to my amp. My pedalboard is wired up with Bill Lawrence (same thing as George Ls, just better plugs).

I like them more than Planet Waves or Monster cable. It gets to a certain level where there really isn't much difference in tone, it comes down to what little coloration you want your tone to lean towards (some are slightly darker, some slightly brighter etc.).

My opinion is that Planet Waves isn't high-end cable. Bayou Cables are made from top-notch cables and connectors and the service is quite good.
FWIW, I actually like a certain amount of rolloff in my cables.

I have one and love it.
