I forget which one is acceptable--8 ohm head through 16 ohm cab or 16 ohm head through 8 ohm cab.

Generally, a 2:1 mismatch either way should be okay.
If I had a choice, I'd go with the mismatch into a lower-impedance cab but there's no shortage of disagreement about which impedance mismatch is less hazardous to the amp.
